The Color of Onions

Spanish Onions come in three colors yellow, red, and white. Yellow onions are full-flavored and are a reliable standby for cooking almost anything. The red onion, with its wonderful color, is a good choice for fresh uses or in grilling and char-broiling. White onions are the traditional onion used in classic Mexican cuisine. They have a golden color and sweet flavor when sautéed.

Zesty Spanish Onion & Chorizo Soup


1 large Spanish chopped onion
mini chorizo links or little smokies
2 - 14-oz. cans of chopped tomatoes with juice
4 cups fat free chicken broth
1 tbsp. cumin
1/4 tsp. cayenne pepper
1 - 15-oz. can of pinto beans, drained
1 - 5-oz. can of refried beans
Garnish with chopped cilantro-optional

 

Cut up chorizos or smokies into small pieces. In saute pan cook chorizo and onions 5 minutes. In 3 qt. sauce pan add tomatoes and chicken broth. Bring to a slow boil.

 

Add cumin, cayenne, onions, and meat; simmer 5 minutes. Add refried beans and pinto beans, mixing well. Simmer for 15 minutes more and serve. Serves 6 or more.

 

Note: A great replacement for chili.
